OUR MISSION

At YUMCHI we want to create a space where people can reconnect with the pace of nature, a slower lifestyle to destress from the demands of modern life. There are so many benefits of living slow, importantly, the mental wellbeing that comes with appreciating the seemingly ordinary but significant stuff in their lives that may go unnoticed if we're bolting through our days.

Like the process of making a batch of kimchi or kraut, the day to day process may be invisible to the naked eye, like watching paint dry. Leave it alone for a time though, and bam! The magic unfolds! We love that you cannot rush this natural process. You gotta give it space and time.

It is this respect for one's own pace we want to see more of.

Through fermented foods, we can help heal our gut and minds. The connection between our largest organ the digestive tract and our most prized intellect is the major vibe in the scientific world right now. We are buzzing with all that is coming to light about how digestive health contributes to mental health. It's not just a metaphor!

Kimchi-making is passed down through women traditionally in Korea. We want to make sure this is kept alive and appreciated as our national dish takes off around the world. ❤️

Lily Hirasawa

a.k.a Kimchi Queen ♕

Lily's calm, mindful energy, deep knowledge & passion of kimchi are inspiring. She was born in Japan with a Korean mother and grew up in Hong Kong before moving to the UK at the age of nine.
.
After graduating from Leith's School of Food & Wine in London, Lily's experiences working in the organic food industry and her unforgettable visit to a Buddhist monastery in Seoul, meant she decided it was time to share her family's kimchi with the world.
In 2020 Lily successfully graduated with Merit a Master’s degree in Buddhist Studies at SOAS University with a focus on mindfulness meditation and the development of early yogic and tantric practices supporting the brand’s wellness goals and providing academically and empirically researched insights into traditions of healing.
