Yumchi Kimchi Chicken Burgers

How incredible are these Yumchi Kimchi Chicken Burgers?! 🥰

They’re the perfect gut-friendly ‘fakeaway’ to elevate your lockdown night in! You won’t be missing your local restaurant once you’ve made these beauties! 😋

INGREDIENTS:
For the chicken:
6 boneless chicken thighs
3cm grated ginger
2 crushed garlic cloves
140g natural yoghurt
2 tbsp soy sauce
Black pepper
1 tsp smoked paprika (add chilli if desired)
For the burgers:
Yumchi Kimchi
Bread rolls
Cucumber and carrot strips
Mixed leaves

Method:
💚 Add all the chicken ingredients to one bowl and mix. Leave to marinate for a few hours or ideally overnight.
💚 Heat some olive oil in a pan. Remove chicken from the marinade, scraping off any excess.
💚 On a medium/high heat fry the thighs for a few minutes each side until golden. Lower the heat and fry the chicken for around 7/8 minutes until cooked through (might need to add more oil).
💚 Toast the bread rolls, top with chicken, cucumber, carrot, mixed leaves and a spoonful of kimchi.
